Technically, you can inspect the hive when it's a little cooler, but that's the threshold for when bees go out and forage. Humidity has more to do with honey production than anything else. They reduce the moisture to around 18% before they cap it.

Why 57 deg. F? Also, does humidity matter? 57 deg. and dry can feel very different from 57 deg. and humid. Do the bees notice?
